How to run it
- Location: score each site by footfall, competition nearby, and access at your actual trading hours.
- Menu: cut it to what you can make fast and well, not everything you can make.
- Pricing: set prices against what your specific customer will pay, not against cost alone.
- Target market: name who you're actually feeding at each site and time.
- Competition: map who else feeds that same crowd, and what they don't do well.
- Operations: time your own service line and fix the slowest step.
A worked example
Situation. Kadri Tamm ran "Tacos Vanalinn," a taco cart in Tallinn, Estonia, that did well at the Saturday market but barely broke even parked outside the bus terminal on weekdays.
Applied. Running the six components separately, she found the terminal site scored badly on footfall and competition (three other stalls, faster service), while her menu of nine items slowed her line to a crawl at both sites.
Result. She dropped the terminal site, cut the menu to four tacos she could serve inside ninety seconds, and moved that freed-up time to a second market day. Weekly revenue rose without adding hours.
The catch
The six components interact, so scoring them one at a time can hide a location that's only bad because of a slow menu, or a menu that's only slow because of a bad site layout. It's also just a checklist: it tells you where to look, not what to change.
A cart that's strong on five components and weak on one still fails on the weak one. Fix that first.
